The flapjack attempt that become the perfect protein granola

I consider myself a pretty reasonable baker.  I’m not going to be winning Bake Off any time soon, but 9 times out of 10 I can follow a recipe and make something edible, in fact I’d even go so far as to say tasty.

It was a miserable rainy day in Cumbria yesterday, and as I was heading out to the gym later on, I thought I’d don my apron and set about baking some protein flapjacks.  With a house full of hamper products, I knew I’d be able to knock something together that would give me a boost of energy to get me through my workout but still be pretty healthy at the same time.

However, it would seem that following a recipe and successfully creating something I can do, half following a recipe and winging the rest, I’m not so good at.  I’d mixed together oats, protein powder, peanut butter, maple syrup, apricots, sultanas and mixed honey seeds, and despite smelling delicious whilst it was baking, it turned out I hadn’t quite got my measurements balanced and sticking together to form a bar wasn’t happening…as soon as I sliced my knife through it, the whole thing collapsed.

Undeterred, and because it smelt just so good, I carried on slicing away, while it crumbled and fell apart even more.  I gave it a taste, and while yes, it was delicious, it certainly wasn’t a flapjack, and I definitely wasn’t going to be able to eat it like a flapjack.  But, inspiration struck and I not wanting it to go to waste, I realised I’d created a granola.  And not just any granola, a protein packed, reduced sugar, gluten free granola, that tastes good!

The true taste comes in when Mark says he likes it, and we’ve since eaten it with fruit and yoghurt, sprinkled on top of a protein smoothie and eaten by the handful while heading to the gym.  In fact, there’s not much left and I’m contemplating whipping up a second batch.

So, if you’d like to make this granola, drop me a message for the recipe, but if you’re looking to make flapjack then you’re probably better off looking elsewhere.  Although, I probably will keep trying, so watch this space…
